In order to get a deeper understanding of the total cost of corporate agricultural production, I mapped the startpoints for the two major ingredients of the fertilizers required (high nitrogen for the cilantro, high phosphorus for onions).

Anhydrous Ammonium Nitrate is the main ingredient of almost all industrial fertilizers. It is hazardous and caustic, yet is produced in such huge quantities that 5% of the world's natural gas consumption is used in its creation.
Phosphorite is a stone very high in phosphorus; it is mined from the Permian Phosphoria formation in Idaho/Utah/Wyoming, refined, and combined with ammonium to make high phosphorus fertilizer. Phosphorite strip mines are quite destructive but are still active due to the rarity of phosphorus-rich rock outside this geographical area.
